Why use an air fryer?
Moving hot air browns the mushroom edges quickly while the centers stay tender. The best results come from a dry basket with enough space for the air to circulate.
Before you start
Brush off dirt and trim the stems. If the mushrooms need rinsing, dry them thoroughly before seasoning. Cut them evenly so small pieces do not overcook.
Crispy Air-Fryer Mushrooms
Ingredients
- 1 lb (454 g) cremini or button mushrooms, halved or quartered
- 1 tbsp (15 ml) olive oil
- 1 tsp (5 ml) soy sauce
- 1 tsp (3 g) garlic powder
- 1/2 tsp (1 g) smoked paprika
- 1/2 tsp (3 g) kosher salt
- 1/4 tsp black pepper
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (4 g) chopped fresh parsley
Instructions
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Pat the mushrooms dry. Toss them with the olive oil, soy sauce, garlic powder, paprika, salt, and pepper until evenly coated.
- Put the mushrooms in the basket in a loose layer, leaving a little space between pieces.
- Air-fry for 5 minutes, then shake the basket so the cut sides turn and the hot air reaches the underside.
- Cook for 3 to 5 minutes more, until the edges are browned, the centers are tender, and most of the moisture has cooked away.
- Transfer to a bowl and toss with lemon juice and parsley. Serve hot.
Cook times
| Method | Time | Done when |
|---|---|---|
| Pan sauté | 8–10 min | Deep brown edges, no pooled water. |
| Pan sauté | 7–9 min | Lacy edges turn golden and tender. |
| Pan sear | 10–14 min | Pressed slices are browned and meaty. |
Small fixes that matter
- Do not pile mushrooms into a deep layer. Cook in batches if needed.
- Dry mushrooms before adding oil; surface water slows browning.
- Check early if the pieces are small. Air fryers vary, and thin slices can finish in 7 to 8 minutes.
Variations
- Ranch-style: replace the paprika with 1 tsp dried ranch seasoning.
- Lemon pepper: skip the smoked paprika and use 1/2 tsp lemon pepper.
- Parmesan: add 2 tbsp grated Parmesan during the final minute.
- Chili-lime: replace the lemon juice with 1 tbsp lime juice and add 1/4 tsp chili powder.
Storage and reheating
- Refrigerate cooked mushrooms in a covered container within 2 hours.
- Use them within 3 to 4 days.
- Reheat in the air fryer at 375°F (190°C) for 3 to 5 minutes.
- Freeze cooked mushrooms for up to 2 months, though they may be softer after thawing.
Frequently asked questions
How long do mushrooms take in an air fryer?
At 400°F (200°C), halved or quartered mushrooms usually take 8 to 12 minutes.
Do I need to preheat the air fryer?
Preheating helps the mushrooms begin browning as soon as they enter the basket. Three minutes is usually enough.
Why are my air-fryer mushrooms soggy?
The basket may be overcrowded, or the mushrooms may have gone in wet. Give them space and dry them before seasoning.
Can I air-fry whole mushrooms?
Yes, but whole mushrooms take longer and brown less evenly. Halving them gives better color and seasoning.
Can I use canned mushrooms?
Yes, but drain and pat them very dry first. They will be softer than fresh mushrooms and may need only 6 to 8 minutes.
